Mushroom Cream Soup: Discover this Autumnal Sweetness for Family Sharing

List of ingredients to make mushroom soup for 4 people

  • 500g fresh button mushrooms
  • 1 onion
  • 1 clove of garlic
  • 25 cl of crème fraîche
  • 1 liter of chicken stock
  • Salt pepper
  • Fresh parsley for decoration

The preparation

  • Start by preparing your mushrooms. They must be cleaned carefully without soaking them in water. You can wipe them with a damp cloth.
  • Slice the onion and garlic.
  • In a saucepan, brown the onion and garlic in a little olive oil.
  • Add the mushrooms cut into strips. Let them cook until they have released all their water.
  • Pour the chicken stock into the pan and simmer over low heat for about 20 minutes.
  • Use a hand blender to puree the mixture.
  • Add the crème fraîche, then season with salt and pepper.
  • Continue to cook over low heat for about 10 minutes.
  • Serve the mushroom soup hot, sprinkled with fresh parsley.

    This mushroom soup is a fairly light recipe, counting around 200 calories per serving. Mushrooms are very low in calories but high in fiber, which gives them satiating power. The crème fraîche provides creaminess and deliciousness, but if you wish, you can replace it with low-fat cream or even natural yogurt to lighten the recipe.

    This velouté can be decorated in different ways to make it even tastier. For example, you can add a touch of grated truffle when serving, to add a touch of sophistication.
