– 500 g of Jerusalem artichokes – 1 onion – 1 clove of garlic – 1 liter of vegetable stock – 20 cl of crème fraîche – 2 tablespoons of olive oil – Salt and pepper

The preparation

1. Peel and cut the Jerusalem artichokes into pieces. Do the same with the onion and garlic. 2. Put the olive oil in a saucepan and brown the Jerusalem artichokes, onion and garlic for about 10 minutes. 3. Add the vegetable stock to the pan and bring to the boil. Reduce heat and simmer for 20 minutes. 4. Once the Jerusalem artichokes are cooked, mix everything until smooth. 5. Add the crème fraîche, salt and pepper.
